Sour Ribs
Ingredients :
2 lb ribs
4 cloves garlic, chopped finely
half tbs. thin soy sauce
half tbs. rice wine
pepper,
1 tbs. tomato sauce
2 tbs. soya souce
half tsp sesame oil
half tbs. sugar
3 tbs tapioca flour oil for deep frying
1 tomato, sliced
serves 6-8
Method:
Clean and cut the ribs into 7 cm lengths. Season
with garlic, salt, soy sauce, rice wine and pepper.
Let stand for 1 hour. Prepare gravy. Mix together
tomato sauce, soya sauce, sesame oil, sugar and
3 tbsps water. Coat the spareribs in tapioca flour
and fry in hot oil over medium heat for 5 minutes.
Remove the spareribs. Reheat oil and fry the spareribs
again for 1 minute. Remove and drain on absorbent
paper. Drain off all the oil from the pan. Pour
in the gravy mixture and boil until thick. Add
the fried ribs. Mix thoroughly. Serve garnished
with tomato slices.
